Pastry burning at edge

You should blind bake the pastry allow to cool add the filling then bake at around 150/160 depending on your oven.
I find a fan oven better than a static for pastry.

I agree with GrannyLaine - it sounds like the oven is too hot. Either turn it down or try putting the quiche on a lower shelf.

I would say if the edges are burning, you need to reduce the oven temperature.

You can cover the edges of the dish in foil before they start burning. Probably about half way through the baking.

Sorry second pastry related question in two days.

If you're making a quiche how do you prevent the edges of the pastry, that aren't covered in mixture,from burning?

It sounds like such a basic question, but I would love an answer
