Thank you for taking the trouble to do this Sago and I do have a slow cooker so one pot recipes are excellent ?

The Aubergine dish works as well with fresh basil as oregano,
Lovely served with a fresh green salad, I always Blanche some fine green beans and add to the salad with a sprinkle of toasted pine nuts, serve with a French stick.

Sago here! Spiced Veg Tagine, I add some extra ginger and a red chilli to warm it up.
It’s great if made a few hours before so the flavours develop.
Tagines cook well in an instant pot if you have one.
Serve with cous cous and a bowl of extra thick natural yoghurt with almonds and coriander sprinkled on.
Flatbreads also work with this instead of cous cous.

I don’t follow that. Why would your sexuality influence the way you eat and vice versa?

re the OP, how about something middle eastern, falafel, cous-cous, and salad, maybe some mixtures, russian salad, beetroot and carrot etc; i could buy all that locally without having to cook anything which would suit me.
or if not vegan, how about shakshuka.
the local kosher bagelry used to laugh at me when i asked for shawshank, but they knew what i meant.

Stuffed peppers topped with goats cheese for the last 6 mins of baking is nice. Chop up mushroom and onion and some cherry tomatoes, mix with and pack of merchant gourmet grains you fancy, season and use to ztiff halved peppers with seeds removes. Put in baking tray with a bit of water in tray, bake 30 -35 mins at 180° C. Goats cheese optional. Could stir cubed feta into stuffing mixture. Could add olives or capers to stuffing mixture

Slightly off topic but many years ago my friend’s sister plucked up the courage to tell her parents she was gay. She was dreading the moment but her parents were absolutely fine and not a hint of disapproval. They extended an invitation for the 2 girls to come to their house for dinner so they could meet their daughter’s partner.

When they were told their visitor was vegetarian there was a great deal of menu planning in advance and trying out different dishes as they’d had no experience of vegetarian cookery. The big day finally came and they were anxious for everything to be perfect. The visitor praised their delicious vegetarian meal. The poor lady got flustered and blurted out “oh I’m so glad you enjoyed it, it’s the first time I’ve cooked a homosexual meal !

I once made baked, rice and herb stuffed peppers, which were very tasty - but the vegan I’d especially made them for, didn’t come in the end!

Mushroom stroganof.
Eggs in nests - put mashed potato into a shallow baking dish, make hollows and break eggs into them, bake until the eggs are cooked. We usually have baked beans with it but you could serve any vegetable.
Mushroom flan - lightly cook mushrooms and onion in a pan with some oil and ground ginger to taste. When cooked, add a small tub of natural yogurt and an egg. Put into a pastry-lined flan tin and cook until the filling is set and golden. The ginger makes the flavour more interesting.

Mushroom risotto is a useful standby with a salad. Chick pea curry, lots of recipes on the web. Alternatively if you live near a Cook you can get excellent frozen meals and desserts.

My veggie standbys are; Marry me chicken but with Qourn fillets, veg tagine with cous cous. Aubergine parmigiana.
Watermelon,feta, chilli and mint salad is delicious with grilled fish.
Grilled Halloumi and melon sticks, Parmesan shortbreads,olives and beetroot hummus with crudités are great canapés.

Any suggestions? Nothing complicated! ? Sister coming to stay soon and I’m always at a loss as to what to cook for her - apart from veggie lasagna and veggie spag bol ?
