I'm just getting started my new adventure in the kitchen. Making different kind of pasta gives me great fun. Do you know any unusual recipes for delicious pasta?

If I thought Stanley Tucci might also be at my local Lidl, I’d be there like a shot!

I managed to buy some guancarlii, yesterday that Stanley Tucci is always going on about. Not in an expensive London deli but in our local food hall. Funnily enough, it was made by Lishman's of Leeds that I thought were Kosher butchers. There is certainly more fat than meat I think I will have to cut it with a razor.
Italian men have certainly got that something.......if they can persuade you to eat a lot of fat.smile

In a lovely old fahioned hardware store in Pienza, I bought a rolling pin which cuts the strips into the right size for rolling. Perfect.

I bought one at the market in Rome many years ago. (along with a lot of other culinary tools!) I must fish it out!

Im so sorry but for me i just couldn’t muster the strength, time or flour everywhere to make my own pasta, but i love a good homemade sauce of varying ingredients, one my all time faves is Ina Gartens ‘midnight pasta’ but i titivate it with this and that, never tomatoes though, thats for pancetta… looking forward to tomorrow dinner now ?

An Independent recipe from last year that I have used,Spaghetti with brown butter Brussels sprouts,sage and pancetta, absolutely delicious.

Can someone tell me how to like pasta? It’s texture always reminds me of soggy or under cooked Yorkshire pud. I’ve tried fresh/dried and even top Italian restaurants but still don’t like the sliminess. Love the sauces though!

HousePlantQueen - it shouldn't be laggy. Poss overcooked. A good rule is to cook for at least 1 min less than it says on the packet. Should be al dente, not a soggy mess. Also, al dente much better for you, slower release of sugar. Regarding sauces, less is more. Avoid gallons of gloop. Butter, pepper and sage, my fave is anchovies melted very slowly with chilli and garlic - bigloli in salsa. Trad a Good Friday dish in Venice, but fab at any time.

I've made sweet potato gnocchi. Exactly the same as standard but with sweet potatoes rather than white. They were delicious.

I had pici for the first time recently in Tuscany and it was fabulous.

Poor man's pasta, no egg traditionally. Where abouts where you? It is only well-known and served in the South-East, Val d'Orcia, Pienza region.

That's where I had it too, Montefolinica near Montipulliciano.
Was Pienza was the town with all the cheese shops?
For ideas to colour pasta try the book by the Italian girls who live in Wales.

Yes, one of our favourites. We go and stay at an agriturismo near there every year- have been for past 17!

We were in the Italian version of a Gite but ate out quite a lot in the little local restaurants. The pici really stood out. I think I have seen a dried version in Sainsbury's and an Angela Harnett cookbook shows you how to make it.

I had it in a family run restaurant in Florence, although it was on various menus …. We travelled around.
It was served with a cheese and pepper sauce and was delicious.

I’ll keep my eyes peeled in Lidl.
