I once poached eggs for dds pratty boyfriend. I draped clingfilm over a ramekin dish and broke an egg into it. Gathered it into a loose “pouch” and boiled in a pot of water. I removed the film and served with the seam on the bottom
He was in raptures! Waxed lyrical about Michlen chefs, best poached eggs ever, I was a genius! My daughter knew I’d cheated, he never did. He was a pretentious twit and did deserve it.
On the other hand my fresh egg custard made in 5 minutes in a saucepan wasn’t a fluk or a cheat.I am a genius.

On the rare occasions that we have a 'full English' breakfast I can make perfect fried eggs. I very carefully cut the yoke out of mine and give it to Mr Maizie, then I nick his egg white...

You could share with my DN, she eats the yoke but won't eat the white!

I posted my own version early on, but it got lost. Now I'm back, I have a feeling that this may fall into the same category as Yorkshire pud'ns and mayonnaise / hollandaise. Everyone's 'fail safe' works for them - but when you 'don't get it' nothing works!
However, I will say that the freshness of the eggs makes a huge difference. I have heard that eggs can be up to 2 weeks old by the time they arrive on supermarket shelves. I don't know how true that is BUT I poach eggs from our local farm very easily up to them being about 10-12 days old, then they fall apart. I have little success with supermarket eggs - and indeed when I have to use them, I just don't poach them.

We fill a small frying pan with boiling water, crack four eggs into a bowl then slide them all into the water together. Cook till the whites are white and the yoke is still runny. Delicious. 😋

Similar-ish. I'm trying to remember back now, my DiL is Canadian and they live in Canada so I don't see them that often. She uses a big saucepan, not a shallow pan, and I've only ever seen her crack the eggs straight into a bowl, never seen her sieve them. I know she will only use very fresh eggs, never older ones, for poaching. Nothing in the boiling water, she tips the bowl out fairly gently, then turns the heat down a bit. She knows I love poached eggs so usually cooks them for me while we're there grin

I have still got a four dish poaching pan, but use it rarely now as DH is not fond of poached eggs.
Now, for myself, I use a tiny pyrex type dish, fill 3/4 full with cold water, slide in the egg and microwave for approx 1 min 20 secs.
Lovely and never fails.
Oh, yes it did once. The yolk burst and made a mess. So when I remember, I pierce the yolk with a cocktail stick nut not always.

I use Poachies. I buy them 100 at a time on line as I have 2 poached eggs for breakfast most days. These bags give a compact shape even when the eggs are not very fresh, when the whites can spread into the water with conventional cooking.

I put an inch of water into a teacup, break in an egg then microwave for 1 min 15 secs (different powers different times). Delicious! Actually takes longer to make the toast.

Me too! I have a set of silicone moulds and they are a pain in the **! Doesn't matter how well I 'butter' them the eggs still stick and end up looking like road kill. Plus I have to heave out the largest saucepan otherwise all four moulds won't fit in together.

I've watched my daughter-in-law crack 6 or more eggs into a big bowl, then tip the lot into a big pan of boiling water. Each egg came out separate, beautifully shaped and cooked to perfection. I struggle to do this method for one!

I need her skills!
