Is YouTube’s Poach many Eggs at Once - Easy and Perfect Every Time very similar to the technique used by your DiL, Rosie51?
Similar-ish. I'm trying to remember back now, my DiL is Canadian and they live in Canada so I don't see them that often. She uses a big saucepan, not a shallow pan, and I've only ever seen her crack the eggs straight into a bowl, never seen her sieve them. I know she will only use very fresh eggs, never older ones, for poaching. Nothing in the boiling water, she tips the bowl out fairly gently, then turns the heat down a bit. She knows I love poached eggs so usually cooks them for me while we're there
