Sausage rolls and mince pies.

I usually make these just before Christmas but as it’s cold and icy outside would like to make ahead of time. My question is should I freeze them once baked or freeze them and cook later? I haven’t got a mass of room to spread out baking trays (mince pies) in order to freeze. Sausage rolls? Not sure what to do there either. Would value an opinion.

I'd be inclined to make them ready to bake. Is there any way you could layer them to make storing in the freezer easier?

I would also freeze them raw.

Definitely freeze raw, as they are both scrummy straight from the oven

Just one more question please. Do you freeze in trays and put plastic bag over before storing in bag? Or have you just placed the trays in the freezer?

I’ve done both ways in the past with good results but I’ve frozen them all raw this year. I freeze in batches on clean garden seed trays then bag up. I keep the ones waiting to be frozen in the fridge covered up, they only take a couple of hours to open freeze. My freezer is packed too!

I would freeze the sausage rolls raw open on a flat tray and then put them in freezer bags. I have at times baked all the mince pies and left out what was needed, frozen the rest then defrosted and heated, it seemed to work alright.

I put them in freezer on trays and once frozen take them off of trays and put in freezer bags.
