JackyB....no,not the one I found.It wasn't a video and I've just spent half an hour trying to find it.The young ladies picture was at the top of the page and she had blonde hair.I found her explanation easy to understand. Now I've got brain ache I'm going to get another slice of lemon meringue pie !!

When I make lemon meringue pie I always sprinkle caster sugar on before baking, that makes it crisp.

This is pertinent, I made a pavlova last night to Mary Berry specifications.
Hilariously I am the worlds worst at meringue and I love 5he stuff, but it’s always a problem somehow. So this time the failsafe Mary…….A power cut during whisking in the sugar.
It lasted an hour.
Anyway it seems to have worked with problems incurred.
I just couldn’t believe it. Had to happen with that.

Lenon meringue pie used to be my favourite pudding. I used to ask my mum to make it instead of birthday cake.

How to make meringue that is crisp on the outside. Looked on-line and a young lady gave the answer..there is Swiss/French and Italian ones.She explained in a scientific way what happens to the ingredients.Finally it made sense. I settled on Mary Berry recipe and hey presto. Adding a small amount of cornflour and white vinegar did the trick. I've just eaten a slice of lemon meringue(crisp) pie .Fab.
