I use a mix of 3 beans, depending on soaked and cooked, ready. Usually black, pinto, and cannellini, but any will do.

Onion, garlic, saute in oil.
Green pepper. Bay leaf.
Tin tomatoes and juice plus broth.
Chili powder, cumin, celery seed, salt, pepper.
Beans.

I sometimes use borlotti or black-eyed beans, doesn't have to be kidney beans. Following a friend's recommendation I now use stewing steak, preferably shin, rather than minced beef.

My recipe is similar to this, minus the honey

I always add a little dark chocolate to chilli as it enhances the flavour. It doesn't need kidney beans.

Baked beans from a can are a tasty alternative to kidney beans

This recipe is really good, why not just do a batch without the kidney beans?

Take a jar of sun dried tomatoes and pour a little of the oil from the jar into a bowl/food processor
, add I onion, 1 red chilli, 2 tsp ground cinnamon and 2 teaspoons of ground cumin.
Blend these until you have a smooth pulp.
Fry the pulp in a large pan gently for a couple of minutes, now add the minced beef, fry gently for 10/15 minutes.
Now drain the tomatoes and blend those with a tin of tomatoes.
Add this to the beef and season.
Drain and add the kidney beans.

You may need to add a little more chilli depending on how hot you like it.

My husband loves chilli con carne. I hate it, cant stand kidney beans. But I want to cook a big batch for him and freeze it in single portions. Anyone got a good, simple recipe I could follow?
