The Coronation Quiche

Is anybody else underwhelmed?
I like my Quiche Lorraine made the classic way as opposed to what I used to make which was “Whatever mum has found in the salad /veggie drawer quiche”
One food writer recommends substituting watercress for the spinach (makes it soggy) and of course peeling the cooked broad beans, now that’s a boring job.
Oh (un)happy memories of church does where the paper plates gave way before you cut the bottom of the quiche!
No, it will be Coronation chicken for me, a glass or several of Prosecco or Cava (or Crémant now that Prosecco is cheap and common as chips) and maybe a cream tea in honour of the Duchy of Cornwall.

I hope so. I would buy it, but I’m certainly not spending time making it.

I've just realised broad beans aren't in season in early May, so I'll need to try tinned or frozen. Any recommendations?

I also thought it would be 'veggie' Chardy, but not so unless you swop out the lard.
I was driving the G'cs home when it was being discussed on the radio. Their reaction? 'Oh no, not spinach' and 'What are broad beans?' I'm going to make a quiche with them just so they can try it out. And I was trying so hard to avoid anything coronation related!

Initially I thought it was supposed to be veggie, but it isn't. Lard? No!
I love homemade quiche, but only ever use 2 eggs. A third of a pint of double cream - no chance. But am always on the lookout for new content, so I might try it.

My favourite homemade quiche is good old extra mature Cheddar and red onion. I’m not averse to broad beans but I don’t think I’d want them in a quiche,

Will def have a go, maybe my light touch is really a heavy one.
I don’t think I cooked them on such a high temp so maybe that’s also where I went wrong.
Will try it out on my next day off.

Meant to add. Try not to overwork the dough. You need a light touch for sco especially and pastry. smile

Here you go Oreo. I work in imperial measurements.
8ozs self raising flour
2 ozs butter
2 ozs sugar
2 ozs currants or sultanas (optional)
1 egg whisked with enough milk to measure 5 fluid ounces.

Rub butter into flour (I usually use the food processor)
Add sugar and dried fruit if using
Mix to a soft but not sticky dough (you may not need all the egg/milk mixture)
Roll out on a floured board about an inch or so thick and cut with a scone cutter. Brush tops with egg or milk.
Place on an oven tray and bake at 200°c fan for about 12 minutes or until we'll risen and brown.

I’d eat it. As I’m not a fan of salmon, my choice would be leek and smoked haddock.

Ooh yes, that sounds good too.

I like coronation chicken.

As for older broad beans, I used to sit and peel off the skins when I was a child and faced with them on my plate.

It sounds a bit bland to me and broad beans don't have a "quichey" consistency.
I'll take a good old-fashioned coronation chicken sandwich, thank you.

I wouldn't have a problem with baby broad beans if they are double shelled. Nobody ought to have to eat the nasty grey outer shell that used to feature in dishes in my childhood. 😂

If I do make a quiche it won't have spinach in it. Unless you squeeze the spinach out really well it will end up being very wet. I would probably substitute spinach and broad beans for asparagus or broccoli.
I like the idea of a cream tea, I make good scones and still have some home made raspberry jam and crab apple jelly.
My SiL wants to come and watch the coronation and my granddaughter will come if there's a buffetgrin.

You could easily adapt it to make it gf just by using gf pastry (bought or homemade).

We recently started eating coronation chicken because our neighbour, who we used to shop for, asked us to buy it for her so we thought we’d try it.Try not to eat a lot of meat but we buy chicken for the dog and sometimes have to find ways to use it up. Just about the limit of my culinary skills, too. So Abigail’s Party.

Perhaps they thought that people might start complaining about the cost of eggs today, only the royals can afford more than two eggs, it's all right for them, they probably have their own hens, chunter, chunter 🐓
