Favourite cake? What is yours?

When I retired I had never baked in my life but it has become a favourite hobby and I try to bake a different cake each week, learning from my mistakes. My favourite cake is definitely a Victoria sponge. What is yours and do you have any baking anecdotes?

Victoria sponge is my speciality (so everyone tells me) but my favourites are barm brack and simnel cake. I also like seed cake although haven’t made any of that for ages.

Courgette and Lime cake National Trust recipe
Beetroot and Chocolate cake

I’m vegetarian so it’s a good excuse to eat cake and get my 5 a day too!

I’m a minority of one I think, my favourite is a custard slice, close second a Viennese Whirl. I rarely have a custard slice because I don’t tolerate dairy very well, but they are so delicious. I can take or leave sponge cakes.

My Demerara fruit cake, which bakes really well as a tray bake.
Anyone for bread pudding? I love it and will resurrect it for the next WI cafe.

seedy cake with caraway, or freshly baked country cake with sultanas, crunchy sugar atop, a chunk of which I could just enjoy, with lime tea.

I like to make a vanilla sponge using a small pot of yoghurt. So easy to make and turns out perfect each time. Put dry ingredients in one bowl, wet ingredients in another bowl and mix. Add wet ingredients to dry, mix together and pour into tin and bake.

Strawberry shortcake is my favourite cake.

However, I keep it simply simple if baking and adore a wonderful Lemon Bizcocho or Lemon Sponge.

During the Christmas holidays, a favourite of our´s is Apple Streudel and home made Apple Pie.

A cheesecake is always welcomed ..

Chocolate éclair or an old fashioned custard tart. Sadly, rarely enjoyed nowadays unless I come across gf ones and then I feel entitled to overindulge. Xx

My favourite is fruit cake, and I have a boiled fruit cake recipe where you simmer the fruit in tea and then add all the other ingredients , egg, butter and sugar, pop in the oven for an hour or so, I don't mind a Victoria sponge or lemon drizzle , there is a great recipe on GN recipe section for the lemon drizzle.

I’m very fond of saffron cake, but probably because it is difficult to get outside of Cornwall. And it isn’t gf😧

They have GF custard tarts in Waitrose, in the freezer section, they are really good - maybe I shouldn’t have mentioned that!

Christmas cake or Simnel cake.
I like what they represent and I like marzipan.

I love any kind of fruit cake. From an early age if my parents went to a wedding they always saved me their pieces of wedding cake. When I got married neither my DH nor my two sons liked fruit cake so I seldom baked it.

My DH loves coffee and walnut cake, our granddaughter baked him one for his 80th birthday last Monday so it is very special to him.

I bake most weekends and I enjoy all the cakes/puddings I make, but I don’t get too much of them since we usually entertain our family for Sunday lunch and they eat them.
I love my home made Christmas cake and Simnal cake, but also like Victoria Sandwich and Banana and Cherry Loaf. My husband doesn’t bake well but does make fantastic scones.
I don’t like bought cake much but can accept M+S cakes at a push.

Any cake with fruit in or flavoured with coffee I won't eat.

Anything else is very acceptable.

Another vote for coffee and walnut. Making one this weekend as it’s our anniversary. Also really like the fatless sponge with cream and raspberries in the middle.

I have a recipe for sticky banana cake with an American buttercream icing I cut from a newspaper decades ago that I just love. Walnuts on top make it perfection

Coffee and walnut is my top pick too. After many experiments I have got it to just how I like it so that's my treat to myself every now and then.

Also love a proper jam doughnut!

Oh, I am nearly drooling reading these posts! I love cake, and enjoy many recipes. Some of my favourites:

Pumpkin cake with crumble topping
Sponge with fresh strawberries and cream
Carrot cake with cream cheese icing
Pina Colada cake - pineapple and coconut
and of course a good chocolate cake

More of a fantasy cake really, Black Forest Gateau from a proper bakers shop.

Deliciously squidgy and slightly wobbly filled with black cherries 🍒 and kirsch and smothered in chocolate crumb.

Desert forks at the ready!
