If you’ve got a lot of French beans to use up, especially if they’re past their best…

It sounds delicious. I was having a root around in my freezer yesterday and came across a batch of tomato sauce I made a while back. This recipe will fit the bill to use it up. Thank you for sharing.

Witzend. I made this in Sept and froze a couple of portions. Last night we had some and it was delicious.

Witzend just reporting back that I made this recipe last and it was a great success, so thank you for posting it.

I made a few minor changes: I didn't fry the onions in oil first (husband very calorie conscious!), I used passata instead of tinned tomatoes as that's what I have in, I added some finely chopped mushrooms that needed using up.
I didn't have any parsley and I left out the black pepper as I don't like it.

I also laid some fresh chicken mini breast fillets across the top and they cooked beautifully in the sauce. I'm a great fan of one-pot cooking!
We had it with a pitta bread each (for the Greek connection) and it really impressed my Slimming World husband 😋

I grow a large variety of beans I make lots of different meals with them. I started making runner bean chutney recipe courtesy of the allotment garden website. It's brilliant I add some chilli to spice it up. I make a large batch of it and everyone loves it.

We like green beans but I usually just steam them, and they can be a bit hit and miss so I'd like to try this recipe.

I make this Witzend & it is very tasty. Your recipe looks more interesting than mine & I'm not very good at simmering it for an hour - far too impatient. I'm going to try your version in the slow cooker, I never thought of doing it that way. Duh!

I made some Witzend and there was plenty to freeze.
Instead of dunking the frozen beans, I just tipped the whole lot in, and used less water.

Thanks, Witzend, I’ll try this, DH has green beans in the allotment and I’m really not keen (I do love the broad beans though!). This might just lift them to a new level.

Oh Witzend, you have made my mouth water, and I was thinking, 'can't be done, no fresh beans', when you mentioned frozen ones. I am off to find the frozen beans and make a batch, right now. Thank you.

There’s a Greek green bean stew called fasolakia, I think I’ve posted about it before, but it’s very nice, so here goes anyway.

Gently fry plenty of chopped onion and a couple of cloves of garlic in a couple of tbsps of olive oil, add a couple of tins of good chopped tomatoes (or fresh equivalent if you’ve got a glut of those too), add maybe one tin of water, not too much, and a couple of veg stock cubes, plus a load of beans, ends trimmed. Plus lots of chopped parsley and black pepper.

Bring to boil and simmer gently for at least an hour, but you can also cook it in the oven or maybe the slow cooker.

We’re recently back from Greece and I fancied some, so just made a batch with frozen beans, dunked in boiling water first to thaw and get any ice off.

Serve with fresh crusty bread to mop up all the lovely juices. I have been known to add some cubes of fried halloumi, too.

A good dish for any vegan guests, too.
