Recipe for pumpkin cake

I am after a recipe for using cooked pumpkin in a cake. But using spread not oil.

Seen ones using grated pumpkin but can't use a grater because of my hands and don't like using oil in cakes.

I want to make a cake not a pie or flan.

I am an experienced baker .

Sorry, I have no recipes but if you are a fairly confident baker whiff you could try a carrot cake and just substitute some pumpkin? I think that would work pretty well.

Batter -type cakes are easy and will take pretty much anything. I use butter but don't see why you can't use a buttery spread. I made a Gluten Free one last week with ground almonds and mashed potatoes, butter, dried fruits, nuts and honey and it was delicious! It was along the lines of a spiced Dundee cake.
I'm a bung-it cook though and don't look for perfection- just something quick and tasty.

I hope someone comes along if you don't want to risk it.

BBC good food has recipes for pumpkin cake they do have icing coverings. You could leave that out if not wanted or just dust with icing sugar. I have made carrot cake which is very similar using cream cheese in the topping that’s nice.
Most of the recipes use butter or oil if you use spread use a bit less as it contains water.

Thank you both . It will look at the recipe Redhead . NotSpaghetti I have a very good recipe for carrot cake .

I am a bung it in cook as well. Because of my hands anything that needs rolling like ginger biscuits I call ginger lumps as I just spoon out the mix same with cheese biscuits. Take short cuts with all my cooking. Still make jam, marmalade and chutneys but my way . No one hasn't liked them yet.

If you have a food processor, you can mush up the cooked pumpkin flesh in that and cream the fat and sugar in there too.
