Parkin/Gingerbread recipe please!

Just a quickie, Shelflife, as I’m pretty useless - roughly what size tin would I need? Thank you!

Thank you so much, I knew there would be some expert advice on here! I will try both recipes, thank you. Also had a look at the Mary Berry if it’s the one that is in her Ultimate Cake book. Do you think if a recipe called for oatmeal that porridge oats would work? Really grateful for the help from you lovely people.

GSM everything thing I cook I have found short cuts due to my disability.

I am a trained chef but never called myself that just a cook . Chef sounds up yourself . I am down to earth.

Since my health got worse had to find ways to do things my way. I still can make my own chutney's,jams and marmalades but my way.

Yorkshire Parkin.

12oz S.R. flour
6oz margarine
4oz caster sugar
2eggs
4 table spoons milk
3 table spoons golden syrup
1 table spoon black treacle
Pinch ground cinnamon
Pinch salt
Pinch mixed spice
1 and a half tea spoons ground ginger
Grease tin or pyrex tray and line with greaseproof paper. I grease with lard , oil may burn!
Sieve flour, salt and spices. Place milk, sugar , syrup and treacle into a pan, melt over a gentle heat, do not allow it to become very hot.
Pour the melted mixture onto flour and beat well, add lightly beaten eggs
and beat till smooth ( will be like a batter mixture) Add more milk if necessary. Pour mixture into the prepared tin and bake for 1 and a quarter hours.
150c for about 15 minutes then turn down to 190c. till cooked - test with a skewer.
Cut into squares, nice spread with butter!
Not really sticky but very 😋 tasty.

Mary Berry's recipe is sticky but light. I put chopped stem ginger in to up the spiciness. haven't met anyone who hasn't come back for a second piece yet!

Gingerbread recipe. Best made day before you cut it.

350g SR flour
3 teaspoon ground ginger rounded
1 1/5 teaspoon level bicarbonate of soda
175g light brown sugar
175g spread or butter
150g golden syrup
6 tablespoons milk
2 eggs
150° fan
Square tin lined all round.

Melt syrup,spread and sugar. I do it in the microwave in the bowl I am making it in. Just do it for 30 secs at a time. It's just to melt the spread .
Add all the rest of the ingredients and mixed well. I use an electric blender .

Bake 40-45 mins. Cool slightly in tin and put onto cooling rack and pull paper from round the cake.

Always a big hit with everyone .

Do you have a favourite Parkin or gingerbread recipe you would be happy to share? Something nice and spicy and sticky-ish would be good! I’ve looked online but hard to know how they would turn out. Also, if a recipe calls for oatmeal is it possible to substitute with porridge oats? Hoping some of you experienced bakers will be able to help. Thank you!
