Redcurrant jelly ideas?

While out shopping post cataract op, I forgot my reading glasses (I have distance lenses in my eyes now) and accidentally bought a nice jar of redcurrant jelly instead of cranberry. What to do with it? I know it goes with meat, lamb maybe but I'm looking for ideas for how to use it in sandwiches or even canapes. Can any Grans advise on tasty combinations?

Buy fresh cranberries when they hit the shops and use the redcurrant jelly to make your own cranberry sauce. Super easy - google Delia's recipe - and far better than the jar version

It's lovely on toast, as an alternative to jam in Victoria sponge etc.

I used to make it as we had redcurrat bushes but had to burn them as they got some kind of disease. Mine wasn't as sweet as the shop bought kind.

It’s nice with any pate chicken hams and cheeses as it is. Added to gravies to enrich them I add it to jellies while making them as they can be a bit bland.

We like jellies in our house. I would use it on toast, in sandwiches and as an alternative to cranberry or apple sauce with meat or poultry.
In my fridge at the moment we have home made crab apple jelly, quince jelly, apple and mint jelly and redcurrant jelly.

I made that once, years ago, absolutely delicious but have never found a shop-bought one as good.

It was such a faff to make I've never made it since, either!

Not a canape or sandwich idea, but I use it with sausages, red onions cut into wedges and baby new potatoes to make a sausage bake. Mix a couple of tablespoons of redcurrant jelly with the same of oil (I use light olive oil but any will do) and a couple of teaspoons of wholegrain mustard. Pour over sausages, onions and potatoes in a tray, scrunch it all over everything and then 40 minutes in a hottish oven - delicious!

It certainly should go well with cold meats.

What about warming it and pouring it over ice cream, perhaps mixed with cherries or some less tart red fruit (from freezer or tin at this time of year)

Make a Cumberland sauce with it for a Gammon or Ham joint at Christmas. I make it about a week in advance it keeps well in the fridge. Delia Smith and Merry Berry both have recipes.
Or as suggested mix with cranberry and use in the base of a steamed pudding. I've even at a push used it to sandwich trifle sponges together or put marzipan on the Christmas cake when I've forgotten to buy apricot.

I had it with my home made β€œIkea” style Swedish meatballs in gravy (with mash) it was cheaper than the jar of cranberry next to it on the shelves. πŸ˜‹

toasted Brie and spring onion with some redcurrant jelly on the side ,Stir some into pan juices from cooked lamb chops add a wee glug of red wine and cook down .Turns a simple chop into a feast

I should look out for it locally, there must be someone who makes it.

I don't really understand the need to use it up. I gave a jar in the fridge all the time. It goes into casseroles, bolognese type sauces, gravy - anything
