What can you do with left over lamb?

I cooked shoulder of lamb yesterday and it was lovely. My husband sliced it all up and there was quite a lot left.

It just looks so revolting cold with little blobs of fat all over. 🤮

What could I do with it other than give it to a neighbour’s dog?

Thank you Mokeswife. I absolutely agree with you. I am horrified at that idea that anyone would throw good quality expensive food like meat away. It is so unnecessary.

At its simplest you do a quick google search 'recipes lamb/cooked lamb'. More basicly you shop in a way that will ensure there is no meat left to throw away. A roast lamb in gravy ready meal is better and wasteless, comparedwith a joint half eaten and then discarded.

I'm amazed that some folk ate suggesting putting it in the bin!! Surely food should not be wasted no matter how wealthy you are? Why buy such a large joint? I can't remember the last time I bought a lamb joint! M0nica definitely has the best ideas!!

And when you've eaten up all the leftover lamb in one of the recipes, boil up the bone with a couple of bayleaves and some peppercorns to make a base for soup.
Shred any remaining meat which is clinging to the bone and return it to the stock; dispose of the bone, peppercorns and bayleaves.
Leave the liquid to cool overnight then, the next day, skim off any fat which has set on the surface. Add your preferred ingredients, herbs and seasoning, maybe some little pasta. Cook until soft and you have a nutricious, delicious lunch.

Lamb is the basis of the traditional Irish Stew. Dice it, the dog can have the easily removed fat, but don't cut it all off - you need the fat for flavour - and mix it with chopped carrot and onion, potatoes and seasoning. Add some liquid such as stock, water and some wine or guiness or beer.
Top it with sliced potatoes, brush them with oil and cook in a slow oven until the veg are soft and the topping is brown and crisp.
Yummy with crusty bread.

Welsh Cawl is similar, I have made it with leftover lamb.

Simmer in stock with carrots, swede, onion (chopped) potatoes, then add leeks, add chopped parsley just before serving.

When I was a child my mum had a mincer and used to mince up leftover lamb and serve it with gravy. I hated it! But I do now like picking at it when it’s cold and it makes a tasty sandwich. As far as the dog is concerned lamb is the one thing that upsets his stomach so we have to be very careful that he doesn’t steal any!

If I cook lamb there are always leftovers as I live alone. I carve it all up, portion into take-away containers, add gravy and then either freeze or put in the fridge to reheat later then it's a a quick ready meal on a busy day. Obviously need to make enough gravy at the time of cooking if you want proper flavour but if you are making later to use with cold lamb use instant gravy mix and add some mint sauce to go with the lamb.

Mary Berry's cumin spiced lamb is delicious with creamy mash. Main ingredients chopped tomatoes and ground cumin.

My MIL used to grind it up and mix it with sausage meat. She lay potato strips on a pie plate, covered it with the sausage meat, covered it in pastry and baked it. It was delicious.

Make stovies or shepherd's pie. Both are delicious warm meals and once the meat is minced you won't see the fat as easily.

I love lamb and fortunately my husband likes it, warm or cold, with jacket potatoes and gravy. I agree though that it can be fatty and needs careful picking over if you're unlucky enough to get one with a lot of hidden fat.
I always make a lot of gravy and skim it carefully when it's cold to get the grease off.
If the meal pieces are small you can make a lovely risotto with mushrooms, onions and a few peas (added late in the cooking with some gravy to enrich the juices).
If I see leg of lamb at a good price I try to buy several to freeze as the meat is so much leaner and needs less picking over. before eating cold.

I loathe the taste of reheated meat so I rarely buy more than we can eat. I don’t mind cold chicken or beef or pork at a push, but just can’t do cold lamb although I love it roasted.
