Ideas for Xmas cake leftovers

Our family cake recipe is now being made by it's 7th and 8th generations (myself and my son).
Between us, we usually bake 5 or 6, 22cm cakes each year.
There's never a need to think of something to do with leftovers because it's so lovely, there's never even a crumb left come new year

Stansgran all those things keep so there is no hurry to use them. Just keep in plastic tubs.
All the ideas posted all sound lovely though.

I have put on weight, 3lbs, and it's not even Christmas yet. So not getting cake or pudding this year, no mince pies or panettone. Only chocolates in moderation. Sad really

Get some vanilla ice cream and mix the glacé cherry and mixed peel through it . Dry fry the almond flaked with the brown sugar. 2 scoops of ice cream with sugared almond mixture on top. Nice light dessert.

I sprinkle flaked almonds on my porridge so they get used up anyway. I think I’d add the rest to basic muffin mix or biscuit dough.

This year I bought a “kit” from one of those wonderful organic refill shops (in Bournville if you are near there, if I may plug it,other shops are available) so instead of having dried fruit, mixed peel and cherries to go sticky and stale until next year, I only had to add the butter and the eggs. Oh and feed it with brandy.
I haven’t worked out the cost effectiveness but judging by the ends of no longer usable spices currants, sultanas etc in my store cupboard (now thrown put) much less wasteful.

I’ve had a go already and started using them up. I like the pancake drop scones one. Should add we don’t have leftover cake just odds and ends of ingredients not worth storing.

Sweet bread pudding could incorporate all your leftovers.

I make a Christmas Sundae dessert with all the left overs . I use stemmed pint glasses , put a spoonful of xmas pudding or cake in the bottom ( moisten with alcohol if you like ! ) and then layer up with ice cream , crushed mince pie , whipped cream , cranberry sauce , greek yoghurt , fresh/frozen/tinned fruit , cold custard , more bits of pudding/cake/mince pie/yule log etc and repeat until the glass is full . Top it off with a dollop of whipped cream , a bit of smashed flake and a chocolate from the Quality Street/Roses/Ferrero Rocher box !

Personally, it wouldn’t worry me if they were out of date, just use them. Nothing on your list looked problematic.

Look on Sainsbury magazine web sight. I found a nice recipe for chocolate Salami.

What are Christmas cake left overs? Never heard of them.

Use it all up by adding eggs, flour, sugar and spices, fold in whisked egg whites to a soft dropping consistency and shallow dry spoonfuls in butter to make christmassy drop pancakes. Lovely warm or cold.

You could make baked apples and use those things to fill the cavity where the apple core has been removed. Lovely piping hot with loads of custard.

Turn them into Christmas Cupcakes, lighter and smaller they can be eaten with a cup of tea or coffee in the run up to Christmas.

I often use up my currants, glace cherries and peel in spicy bread pudding, one of MrAs favourites. We don't make it often because we don't usually eat bread so it's ideal after Christmas. Lots of spices and can be frozen. Cut into slices and eat cold or warm up with the remains of the brandy cream as a pudding.
