Storing Large Amounts of Strong Cheddar Cheese

I’ve been given a 10lb piece of vacuum packed strong cheddar cheese but have no Idea how to keep it fresh and there are only DH and myself living here. Can anyone help please?

I would cut it into smaller portions and freeze. While it's still in vacuum pack it will keep fine in fridge. If you know someone in a shop with vacuum packer you could ask them to do small portions for you.

You can freeze it in smaller blocks or grate some and freeze in bags.

The texture will change slightly the freezer (and many get more crumbly) but will still be edible after. We have done this in the past when we had enormous cheese portions like yours.

I grate a kilo in half a minute on the grating disc of my Magimix. It keeps perfectly well in sealed freezer bags, and any size of portion can be taken out and used for cooking. Blocks of, say, half a kilo can be safely frozen and thawed as needed.
