Have you discussed this with the stoma nurse? I have a little experience of this and, whilst avoiding too much high fibre food, most people are able to eat a varied diet.

We had to do a pre op diet for DH recently so it was rice pudding, white toast, plain cake and rich tea biscuits, plain chicken and new pots (peeled), ice cream

I'm sure you will have had diet advice. It's sensible to take things very slowly at first. As time goes on your DH can try very small amounts of foods that need to be avoided in the early days, but obviously not very high fibre foods. Little steps at a time and you will begin to find out what he can tolerate in moderate quantities.
