Dairy free help please

I've been tasked to make a dairy free dessert for an upcoming birthday dinner - but not cheesecake.

I've done a lot of googling and have dismissed so many recipes because they are

Cheesecakes

Mousse/sorbet/fruit salad - too simple, and really if I wanted to make a fruit salad I wouldn't need a recipe!

Cakes/biscuits/cookies - not desserts. I think I'd be disappointed if someone served me a biscuit for dessert.

I'm thinking of a tarte tatin which would work but I threw out my overproof skillet so would have to buy a new one, but I will I have to.

Does anyone have any personal recommendations for a celebratory type dairy free dessert?

Yes, any tart (or a crumble - depending on the weather)?

I've made tarte tatin in a cake tin by the way.

Or what about slices of ripe pineapple cooked in vegan butter, sugar (or honey if they eat it or maple syrup) and rum.
Great with vegan ice cream.
I cook my pineapple on the hob in an omelette pan.
Can add mango or cherries.

I had a delicious lemon meringue pie at a friend's house - the meringue was chick pea 'juice' (aquafaba) - set with agar agar.

ferry23 there are many dairy free desserts, as above or sponge puds made with Stork marg.Summer fruit pudding made with berries and bread then popped in the fridge with something heavy on top.Tesco do a Swedish Glace vanilla dairy free ice cream to go with any pud.

If you use the Flora vegan spread, you can make any pastry. Iโ€™ve used it for lemon meringue pie, apple pie etc.

My granddaughter is dairy free, so had plenty of practice.

Works well with sponge cake too, so that can be used as a base.

I forgot to say it has to travel well! I shall be making at home and then it needs to be transported to the venue.

Many desserts are naturally dairy free - dont overthink it. I'm lactose intoerant. If I'm out I look at the vegan desserts so you can try vegan recipes.

Lemon meringue pie is, if made traditionally, almost dairy free. You would need to check your recipe but the only milk challenge is the pastry. However, I prefer a biscuit base anyway - I'm sure Lemon Meringue Pies didn't have pastry bases until recently - so I use 300gm gluten and dairy free digestives and 80g dairy free spread (available in all the supermarkets I have tried).

Good luck but also enjoy yourself.

I work with 2 people who follow a vegan diet.....they both make a lovely vegan biscoff cake for office celebrations....one of the nicest cakes I've ever had ๐Ÿ˜‹

Pavlova - meringues are pretty

Fruit cobbler if you make the scone with oil

You can buy dairy free choc, (or just use cocoa) and make a mousse with coconut milk - delish!

Stewed fruit of any kind served in a meringue flan. Meringues are made only using egg-whites and sugar.

ferry23 For a fancy dessert we like posh fruit eg chunks of peaches and mangoes in a flavoured jelly. I use Monin syrup to flavour the jelly, to about 20% of the water used for the jelly. Mango syrup flavoured jelly goes nicely with this combination of fruits. Perhaps use a raspberry coulis as a topping?

Using Monin syrups normally used for flavouring coffee can give lots of variations, eg strawberries in rose flavoured jelly, etc. Waitrose sell packs of frozen chunks of mango, but I cut the peaches (or nectarines) myself.

Layers of different fruits and enclosing jelly can be fun, as can whisking spare jelly into a froth to make a topping.

You can buy dairy-free cream and custard.

But make sure there are no coeliacs there, best label anything with wheat.
