Nachos - opinions/advice please

We’re going out for Sunday lunch in a couple of weeks, but I know that in the evening I’ll have 2 men who’ll still be hungry. I’m thinking of nachos but with a bit of a twist. No beef (they’d hate that) but the usual peppers, toms & onion. I’ve seen a recipe which makes a base of finely broken corn chips, mixed with finely grated cheese, and then some butter added. I picture it a bit like a cheesecake base. You refrigerate it for a while then (& this is where I want to deviate) bake it - maybe 10 minutes. I’d then sprinkle the chopped veg, grate a little more cheese & quickly bake or grill. Afterwards, dollops of guacamole and sour cream.
The reason I’d like to try this is that all too often the toppings don’t seem to cover the tortilla chips, no matter how much I prepare. Also, I can have the base ready to cook - or if they prefer we can go for gazpacho as I can use the same crudités.
Am I mad? I can’t try it first as there’s only me to eat the base. And what timings would you suggest? I’d really appreciate your input.

You can just empty a bag of tortilla chips into a microwave safe bowl and add salsa and cheese and put in for a few minutes and serve with sour cream or whatever
It’s like a student snack

All of the nachos don't have to be topped? Make a vegetarian chilli type thing and have nachos to dip 🤷🏻‍♀️

I think a Buffet is a marvelous idea.

This way each person can select from a wide variety of starters.

I do not believe everyone is a "Nachos Fan" .. An excellent buffet which features a global assortment would be a wise idea.

Italian, Japanese, Chinese, British or German cold cuts & cheeses, Salads for those who wish, Mini Pizzas, etcetra.

Delicious cauliflower crust has cheese, whipped eggs as binders, I can't think this would be very different. Perhaps omit the butter.

I'd definitely go for a buffet. As much ready-prepared as possible. Salad, cheeses/crackers/breadsticks, cooked ham, home-made tuna pate, a good pork pie, coleslaw. Maybe a warm quiche or two as well. And of course a fruit salad/cream and a cheesecake or gateau.

I'd do what we call a "picky dinner" with cheese, salami and cold meats, little pork pies, tomatoes and so on.
If you don't want to put this all together yourself you could look on the Ocado site where M&S do a selection of deli tubs that are 3 for £8 and also a Summer Picnic meal deal which would both give you quite a lot of variety. Much to my surprise my husband really likes their crustless quiches (which just have pastry on the bottom) and they do a good range of fish and meat patès too. We usually have one of the better ready to bake baguettes from Ocado with this.

My husband had a recent stay in hospital and they asked him what his favourite food is. Egg and bacon was his answer! Easy peasie.

You must enjoy making that sort of thing so go ahead but for me it sounds too fussy for the end result.
I'd go with good bread a selection of cheeses , pickle or chutney etc or my all time favourite, thick hand carved ham, egg and chips!

Many thanks for suggestions. I probably should have said that the two men I’d be feeding are DS2 & XDH, so I know their tastes pretty well, hence no beef. I’ll have cheeses in any case, thanks NannaRose, & yes SueDonim the soggy base does worry me. Glad you think it sounds good, CanadianGran. Thing is, they both live thousands of miles away so I don’t want to ‘appear’ to be going to much trouble but ……….

If you can afford it, I'd just put out a decent cheese board, with good bread (more filling than crackers) celery and fruit. A 'keeping' cake if you think you need more.
Dense cheeses like Cheddar, Red Leicester etc. are filling, Stilton goes down well, and you could have a lighter cheese as well. Tightly wrap left overs, they keep for ages.

I wouldn’t like that, personally. I think the veg would make the base soggy. I make nachos fairly often. I start with a layer of whole tortillas, add chilli con carne (you could substitute a vegetarian version) and a layer of salsa, then more tortillas followed by grated cheese. I don’t bother about it being covered from edge to edge, rough and ready is fine for me and I love the toasted tortillas. Crunchcrunchcrunch.

Bake for 10 minutes at 160 fan. Serve with sour cream & guacamole, if desired. .

Seems a lot of fuss to go to. Why not just ask what they'd like or put on a cold buffet or some sandwiches?

That actually sounds pretty good! You could make the base in advance, all the chopping for the veg in advance as well, and since it won't need too much oven time just do it as the crowd gets peckish.
