Beetroot - fresh - ideas please

Have 2 large beetroot in my veg box this week. Any thoughts of what I can do with them?

just had a starter at the weekend when out for a meal, breaded goats cheese with beetroot relish,,,fantastic.

Freshly cooked, warm beetroot, butter and seasoning in a brown seeded sandwich. Definitely my favourite.

We love beetroot soup.
Also try roasting it with asparagus, and once out of the oven sprinkle with lots of grated Parmesan cheese.

I mentioned beetroot jelly Minimoon but I didn't have the recipe so great that you have posted it. We had it at a village garden open day lunch anf dh loved it.(I hate beetroot).

Jellied beetroot.

Ingredients for Jellied Beetroot:
1lb cooked beetroot, cubed
One packet of blackcurrant, cherry or raspberry jelly
½ pint boiling water to melt jelly
¼ pint vinegar
2 tbsps lemon juice
Cold water to make jelly up to a pint
Method for Jellied Beetroot:
Pack jars with beetroot and pour jelly over.
Shake jars to ensure no air spaces and further top up if needed. Easy Peasy!

Roast, cool, peel, cube, chill.

Use in salad - toasted walnuts, chopped apples, greens.

Vinaigrette dressing, feta topping.

Delighting absolutely ..

Shall pick up Feta & Walnuts, fresh tri color greens and apples Monday ..

This is a great starter ..

I wish that I liked beetroot,because it's so good for you.

My favourite sandwich since childhood has always been cheddar cheese and beetroot - yum!

The greengrocer used to cook them daily and you were always able to buy a fresh one. It seems they are only available now in pre-packs which are not at all same. I buy a bunch of raw ones regularly and cook them for 20 minutes in the pressure cooker. I’m yet to make a beetroot cake.

Look for a recipe for Charkali. It is a Georgian dish of beets and plums.

Finely slice or grat, keeping raw. Add a dressing if wanted. This from alife -long beetroot hater.

Anyone made beetroot wine. Husband used to do so and once when we had a French exchange studen many years ago. He told us that that was what the French peasant drank Was drinkable if it was matured long enough

Boil and eat warm. Soup : beetroot, onion, tatties, and stock. Add any other vegetables you have, season and liquidise or push through a sieve.
Salad : grated is great with salad leaves.

Roast them. No need to peel. Top and tail then cut into large chunks. Lovely.

In the US we just called them beets. I love golden beets sliced thick- just roasted. I coat them with olive oil, salt and pepper. I roast them on a cookie sheet at high temp and turn them once. They develop a sweetness that's hard to describe.

We bought Beetroot bread from a posh Garden Centre shop and liked it so much I thought I’d have a go and just shredded some beetroot in the dough - looked pretty and tasted good - lots of recipes online 😊

When I was a toddler, I loved beetroot (I still do), and I would eat it straight from the jar—homemade pickled beetroot.
One day I was toddling off up the path covered in beetroot juice as usual, vest and nappy covered, but the lady next door saw me and came flying round to see Mum, thinking I had had an accident and needed an ambulance!
