I’m just discovering canned lentils, and I’ve been surprised at how good they are. This week I made a Nigella Lawson recipes for a sausage casserole, adapted to suit us. Basically, just chopped up onion, celery and carrots and fried gently in olive oil, added stock, teaspooon of tomato purée, garlic, bay leaves and drained lentils. Browned the sausages in a separate pan then added to the lentil and vegetable mix, put a lid on and cooked it gently. (Could have done it all in one pan but I was in a bit of hurry.) I might add some chopped up cavalo Nero another time, but any green veg on the side would be good. Very tasty and I’ll definitely be adding it to my list.
I always find red kidney beans a bit trickier - but I’ve got a recipe for chicken fajitas using leftover chicken, smoked paprika, red pepper, onions, chopped tomatoes and kidney beans and a small can of sweetcorn if you like it. (You can use chilli powder too, but I don’t. ) Use it to fill soft, wheat tortillas, put them in an ovenproof dish and spoon over crème fraiche mixed with mozzarella cheese. Then into the oven for 25 mins or so. (Watch them though, so they don’t over brown.)
I always think the chicken and bean mix would be good just with rice as an alternative
