What to make with canned Green Lentils and canned Black Eyed Beans?

Don't know why I bought them and now I don't know what to use them for. Any ideas please. I normally used packaged red lentils and canned kidney beans.

I often put a can of green lentils into a soup I am making. Both the lentils and beans can be added to a stew or casserole. I would not look to make either as the centre of a meal, rather an ingredient to be added. At the moment I could use either as a component in a salad. Not the whole can though. Be bold,

I use a family favourite spicy beef casserole recipe which includes the addition of a can of green lentils during the last hour of cooking.

I make Dahl with the lentils or put them in stews casseroles soup etc. It reduces the amount of meat I use. I have put half of a tin of kidney beans in a chilli. The rest will be used to make refried beans for lunch. I have a cupboard full of different tinned goods they are so useful.

I wouldn't use the beans, suggest you put it on the free food trolley in your supermarket!
We quite often eat lentils, I usually make a savoury mix with onions (cubed, slice or whole shallots), garlic, tomato puree or sliced/chopped tomatoes, and sometimes cubed peppers. I usually season it with Italian herbs and fennel seeds (5 spice powder is a good substitute for fennel). It can be varied by using curry spices and fresh coriander, fresh thyme or your favorite herbs.
I normally eat this with sausages, usually simmering the sausages with the lentils or baking in the oven if I've got it on, though it's nice with other meats too.

Any Indian cookery book will have many recipes for pulses of all kinds, so basically any lentil curry can be made with what you have.

Our family favourite is black bean chilli. You could use any canned beans...

I think in North America a sweet potato is either called sweet potato or yam (though they’re not really yams at all), and a swede is called rutabaga. Swedes and sweet potatoes aren’t completely interchangeable, I wouldn’t leave the skin on a swede, nor have it as the main meal ingredient, but I only really use them to mash with potatoes and carrots.

Add them to a chicken curries, or lentil moussaka is delicious. Or chop some peppers and raw red onion, and perhaps add a tin of sweetcorn, sprinkle with whatever herbs you have and tiss in olive oil, for a lovely, healthy, bean salad.

I’m just discovering canned lentils, and I’ve been surprised at how good they are. This week I made a Nigella Lawson recipes for a sausage casserole, adapted to suit us. Basically, just chopped up onion, celery and carrots and fried gently in olive oil, added stock, teaspooon of tomato purée, garlic, bay leaves and drained lentils. Browned the sausages in a separate pan then added to the lentil and vegetable mix, put a lid on and cooked it gently. (Could have done it all in one pan but I was in a bit of hurry.) I might add some chopped up cavalo Nero another time, but any green veg on the side would be good. Very tasty and I’ll definitely be adding it to my list.
I always find red kidney beans a bit trickier - but I’ve got a recipe for chicken fajitas using leftover chicken, smoked paprika, red pepper, onions, chopped tomatoes and kidney beans and a small can of sweetcorn if you like it. (You can use chilli powder too, but I don’t. ) Use it to fill soft, wheat tortillas, put them in an ovenproof dish and spoon over crème fraiche mixed with mozzarella cheese. Then into the oven for 25 mins or so. (Watch them though, so they don’t over brown.)
I always think the chicken and bean mix would be good just with rice as an alternative

Another vote for sausage and lentil casserole. Make bean burgers with a little spice and some veggies. Delicious.

I use the green lentils in curries, spag bol, and chilli instead of meat.
I use the black beans with red kidney beans in chilli.

It would have never have occurred to me to use canned lentils, however reading this I will give them a go. I’m rather fond of them generally in anything.

Thank you will definitely use black beans in a curry, lentils in a sausage casserole I already make one with red dried lentils, so it will be different. Would use beans in a chilli but I love the red ones.
