Shortbread dough in the fridge

It was much appreciated at the party- my neices's husband said it was the best ever- my sister said the Brownies were really good and they were eaten. Win win!

You've probably cooked and eaten it all by now but I used to make shortcake dough midweek to roll out and use at the weekend. Never had any problems.

The thing is, when you bake foe yourself, even if it "goes wrong" somehow it is invariably delicious.

I speak as a bung-it cook who cooked for a family of 7 for many years.
When things didn't seem to work out as I'd thought they would I just made ip a name - "Saturday surprise" or "Pear flop" or "Chocolate scrunchits".

My children (and friends too quite often) should make up names.

Cooking/baking ftom scratch grows your confidence in cooking from scratch. If your ingredients are good enough so will be your baking in my opinion.

I figured if I baked it it would keep longer. Although I made far too much I haven't much left to take to the party because I've eaten it all!

I also make some brownies (couldn't resist trying one of those either!) so I realised what a joy baking your own stuff it, and pretty easy too.

Maybe I will do more...!

I would use it.
Butter keeps a while in the fridge and there's nothing peculiar in shortbread.

Yesterday I decided to try and make a shortbread. I rarely bake these days, but thought I'd try it out before making a strawberry shortcake for a party at the weekend.

I made one lot and left the other in the fridge as per the recipe but didn't use it as I got caught up in the tennis.

I now have two lumps of dough in the fridge wrapped in clingfilm.

My question is how long should I leave it there? Will it keep until Friday when I intend to bake for the party, or should I just cook it today and keep in in a tin?

I understand my inexperience is showing here but I don't want to waste it and I don't have a freezer, but even then I wouldn't know how long to thaw it!
