How are you doing with meals during the hot weather?

I am using some of the meals that we have bulk cooked from the freezer and trying to be inventive with salads. Mary Berry advises that it is better to use the oven than the top of the cooker with lots of different pots and pans. One tray bakes in the oven do work okay but it does make the kitchen hot! What are your go to meals when it is very hot?

I had intended to make a fish curry, husband said "surely you don't want to cook, what's in the fridge we can eat?" Luckily Scotch eggs, mango chutney, cherry tomatoes,avocado, cucumber, brie, all of which didn't really go together, never mind! Followed with some chopped fresh fruit, orange, apple nectarine, banana, strawberries and black grapes with cream. Sitting on the patio enjoying the cool of the evening, it's really nice not feeling overly hot now. I'm contemplating whether to have a glass of wine. I must admit cooking seems a complete chore in this weather.

This long hot period covered the whole time we were moving. A fairly complicated move with stuff going to store, stuff coming to our temporary home with DD and stuff into local storage to enable us to camp in our new home while we do work on it.

As a result we have been constantly on the move between our previous home, store rooms and DDs house and we have been subsisting almost entirely on ready made food, bought sandwiches, salads and ready meals. We are currently on a short break in France - eating out in retaurants.

I cannot wait to get home on Sunday so that I can get back to home cooking. while the hot weather continues it will be light food: fish, chicken, new potatoes, summer vegetables and summer fruit.

We're eating almost as normal. Big breakfast before it gets hot. Decent meal at lunchtime/mid-afternoon (today was fish pie and green beans) followed by strawberries and cream.

The only difference is having some snacks like watermelon and feta, or a watermelon and strawberry smoothie to keep water intake up.

A bit the same here.Both me and DP still have to go to work so do get hungry.
A ready meal bulked out with some salad or veg makes an easy meal too.

I’m not hungry either. I’m living on sandwiches. DH on the other hand has had steak pie chips and peas.

I've just finished a mixed grill with a pork steak, small sirloin steak, sausage, baked potato and peas/carrots/sweetcorn. It was lovely if I do say so myself.

Normal menu here, cottage pie last night with three veg, quiche, new potatoes, carrots and peas tonight.
We rarely eat desserts.

Crackers and sun dried tomato houmous, followed by a bowl of raspberries and cream. Who needs an oven 😊

We have been having fridge tapas, especially as it's Wimbledon fortnight smile Just come back from Spain, where the advice given for dealing with a heatwave, is not to open the oven door from the 1st of May until the 1st October. Sounds good to me!

I’m already sick of salads 😩

Mostly I’m just carrying on as normal but not bothering with potatoes, pasta or rice as I’m low carbing.

Just had fish and chips on the seafront. Later we might have fresh fruit with blackberry & vanilla ice cream - although we're pretty stuffed right now!

I’ve just been down to the square below. I’ve had fish & chips. Very nice, no hob or oven on in this heat and on the way back up I went into Thornton’s for two scoops of vanilla ice cream for Himself. We must look an odd couple eating (occasionally) at the table together these days.

Strawberries and cucumber were sold out at Lidl today so I'll have to make do without
I have lots of lettuce in the garden but the pigeons have gobbled all my berries.
Lucky I'm not too hungry but I've invited 2 friends for supper.

Salads made up of whatever is in fridge that can be chopped up. Couscous with salt, curry powder and feta. Rice salads.
Mostly cooked early in the day and eaten cold later including meat.
Love it and means that the chef gets some time off.

I've more or less given up eating but I am drinking plenty of water and taking multivitamins. Not a good idea long term I know.

Cold meats, smoked salmon, boiled eggs, pork pie, quiche, coleslaw, beetroot salad, rice salad or anything else you can find that I don't have to cook.

Marks and Spencer is my friend, they have a lot of new deli and salad items at the moment, so we have been taking advantage of them. I don’t want anything that I have to prepare or cook just now, and I don’t want to raise the temperature in the house by switching the cooker on. We’ve had a couple of barbecues but I don’t have to cook then.

I made a huge ratatouille as aubergines and red peppers were on offer, it’s very useful to have in the fridge
On its own, lots of grated Parmesan and crusty bread for lunch, as a filling for jacket potatoes, last night had it with chicken breast.
I cook in a roasting tin in the oven late in the evening with the door open and only takes about 45mins.

Marinated chicken cooked on barbecue, salad and either quinoa, vegetable rice or chips.

Slices of sourdough with Cambazola followed by lots of strawberries. Washed down with fresh raspberry lemonade. 😋

Salads, Mediterranean style tappas meals with olive bread.
Fresh fruit, lots of berries from the garden, yoghurt and ice cream. Eaten outside in a cool spot.

Salad and quiche, salad and prawns with avocado, salad with coronation chicken, salad salad salad! We shall be turning into rabbits!
