What to do with too many chicken breasts

DH has lumbered me with 1kg of skinless chicken breasts when what I actually wanted was 500g of chicken thighs with skin on.
I'm minded to chop the whole lot up, stir fry and freeze most of it.
Any other quick solutions? It's all just for the 2 of us.

I too buy chicken in bulk from Costco. I usually freeze them in twos but with a few single ones too in case we have company to cook for. I use them in various different ways. One simple idea when you have defrosted your chicken breast, remove any sinew, Make slashes in the meat and place in a tinfoil lined dish and cover with Geetas Mango Chutney. Put foil over the top and cook in the oven. Towards the end of your cooking time remove the top foil and turn the breast over to brown the chicken. We love them with baked potato but also nice with rice. Other recipes include stir fry, curry or we like to use chicken for kebabs. Sometimes just roasted and left to cool for sandwiches or chicken and chips and salad.

I freeze chicken breasts individually in plastic bags . And put them in a dish in the bottom of the fridge if I want to use the next day . They defrost overnight . I buy large ones.

I freeze them in twos . That allows you to cook them however you want .

I find a chicken breast usually does two of us. I freeze in twos. Once defrosted I use one for a stir fry or curry and next day use the other cut in two and wrapped in bacon.

I find that one is enough for the 2 of us now. I often chop one up small and stir fry it with lots of veg and noodles.

I am vegetarian so not very confident that I have good ideas to help you with this problem Flutterby... but I do keep noticing the thread title again and again.

Each time I briefly wonder what it means. This is because I read it rapidly as

Chicken kievs , make breadcrumbs in blender , chop garlic, cream with butter. Slit side add butter . Then dip in flour then egg then breadcrumbs. These can be frozen raw or baked on a flat sheet. Great if avoiding gluten as we use gluten free flour and bread scraps. Nice quick tea from the freezer .

make into schnitzels. You can dip them in the egg and breadcrumbs etc and freeze in twos which once defrosted gives you a very easy dinner.

I wrap each one in clingfilm and put in a large freezer bag. Thaw and use as required.

well, like you my view is that one chicken breast is one too many, dray and flavourless. However, help is at hand - here is a wonderful Jewish wedding dish from Central Asia which I make often. It include chicken balls (no jokes pls). Put chicken breasts in blender with 50% weight almonds and one egg (you will prob need to do this twice at least). Blend and roll into balls which you can freeze separately in batches. This recipe places these on a bed of aubergine puree mixed with a béchamel made with oil and chicken stock, not butter and milk. You don't have to do that bit but could serve on a tomato sauce or a yogurt/mint one.best of luck.

I alway freeze them singly as we find a whole breast each is usually too much. If it’s a bit small for two I just add a few
mushrooms to top.
But, I love the tip of freezing them individually on a baking tray - saves me a lot of time as I wrap each in cling film! So thank you for that!

When we are getting ready for a road trip or camping trip, I usually precook my meat, mostly chicken breast but also ground beef and pulled pork and then freeze the cooked meat in what would be a single meal portion for hubby and me. I might have 4-5 different baggies of the stuff. I usually just do salt and pepper and maybe onions and garlic lightly I can add whatever I want to make whatever once we are away from home. As in gravy for over toast or tatos or noodles or with some kind of sauce for tacos or sandwiches or in a casserole or something. I do this also when I know life is going to get crazy.

Freeze them. I bought a kilo of boned thighs this week. Took out two for lunch and froze the rest.

Had these this week, bashed them thin with a rolling pin fairly gently. Seasoned with paprika herbs salt and pepper. I covered with panko breadcrumbs (beaten egg to stick) and fried.

I would put them on a tray and freeze them individually, bag them once frozen and then you can take out one/two etc as and when you want some. I use chicken breasts for wraps/curry/stir fry/hunters chicken/coronation chicken.

Thanks folks. They are huge so I will freeze 3 of them.in ones. Might cut them up a bit first so they thaw more quickly.

There’s loads you can do with a pack of chicken breasts. I would also freeze them in twos.

We did this once. Bought a huge pack in Waitrose which was reduced and I put them in twos in the freezer. Worked well and they were a bargain.

Freezing them in twos is what I would do. You then have the option, one you’ve thawed what you need, to either cook them whole and follow a recipe of choice, or dice them and cook them to various recipes calling for diced chicken, eg, pie, kebabs, stir fry, etc.
