I love banana fritters. I mash the bananas and add them to the batter, then fry in the normal way.
(Is it only me who thinks that bananas have lost their flavour?)

I use them in oat breakfast bars, with trail mix in too. I make a traybake and freeze in pieces so when I’m travelling or in a rush at breakfast time I can grab one. My son takes them to golf too.

My new favourite thing to do with them is when they are really ripe, cut into chunks and freeze. Then bring out of freezer and blitz with a small amount of milk and a little vanilla to make the most delicious (N) ice cream. I had read about it a lot before trying it, however no turning back now it’s so healthy and delicious.

I use bananas, sliced or crushed, instead of tinned peaches in this recipe, with the optional addition of chunks of chocolate. It works with many different fruits such as apple, berries, rhubarb or plums. It is a cobbler which doesn't involve making a separate scone dough. The fruit added to the top ends up on the bottom.

If you like the blended iced coffee drinks at certain chains
Freeze slices and blend with coffee milk and ice cubes,can't taste the banana but makes it really thick and creamy

Thanks for the recipe shysal. I will definitely try it as I make a lot of blackberry cobblers at this time of year but have never thought of using bananas. DD often gets a veg box at Lidl on Sunday and if there are lots of bananas in it she will bring me some.

but it could just be my taste that's diminishing.as I age..

Mash banana with an egg and a tbsp of any flour to make a batter, fry in butter or oil, turning as needed. Can add cinnamon or vanilla.

Recipe from a friend:
Slit skin lengthwise, place bananas in roasting dish with slit uppermost, pour some rum and demerara sugar on top of each banana and bake. Scoop out with a spoon, eat with ice cream.

I might try peeling them next time and just sprinkling the rum and sugar on top then baking.

They make grand compost, then you can use them to grow something really enjoyable like cabbage.

Peel and freeze chunks to use in smoothies with yogurt and/or milk Add vanilla or cinnamon. Optional add raspberries, strawberries or pineapple.

Yes, this is the one I use, it’s really easy, it’s gluten free but you can use normal oats instead. I just add a couple of spoons of trail mix to the basic recipe.

You can make banana chutney or add them to curries .
I sometimes slice one into Greek yoghurt add a dash of vanilla and honey and whizz it up in a blender .
It's almost an Indian lassie drink .

I also strain off the whey from Greek yoghurt and beat for a good 30 seconds and add chopped fruit - banana is great.
Add some honey and combine and freeze.
It makes a nice ice cream .
Bananas are a rich source of potassium .
Eat enough of them and you'll register on a Geiger counter .

Not the point, I know, but re banana bread, dd often makes it and I find it too sweet. I have made some with the zest of a lemon included, and to me this really does improve it.

Pancakes, bananas and maple syrup, yum. Made these for supper last night.
If your bananas are not too ripe try a banana curry, surprisingly delicious.

Great ideas everyone! I like to blend overripe bananas into smoothies or freeze chunks for baking. I also dehydrate slices for snacks and store them in labelled jars; recently I ordered some custom labels from brandmydispo and it’s made my pantry so much more organized. Bananas are so versatile!

Now and then I make bananas ‘flambés’ except that I don’t actually flame them! Butter, brown sugar, orange and lemon juice, a slug of Cointreau or the Cyprus equivalent (can never remember the name) - get it all bubbling nicely, add bananas, sliced lengthways and across, for a couple of minutes. Delish!
