I think making soup with pumpkin is a bit like stone soup in the fairy tale. Pumpkin doesn't taste of much but makes a lovely rich soup with the right ingredients. Yours sounds really yummy Witzend.
Just had some for lunch, after ‘re-purposing’ my Halloween pumpkin. Onion, garlic, chicken stock cubes, ginger and red chilli pastes, coconut milk, a stick blender in the pan. 😋 All the cutting up and peeling didn’t take too long at all.
