A lovely warming main meal winter soup, good for using up bits of leftover chicken.

Basically a Mulligatawny. I can no longer find the actual recipe but have made it many times so here goes:

One onion, or half a large one, 2 carrots, 2 sticks of celery, chop them all small, sweat in a little oil for a couple of mins, add a good dessert spoon of curry powder, cook a few mins more.

Add water, I’ve just used about 4 mugfuls, and a couple of chicken stock cubes. Bring all to boil, reduce heat, simmer for around 40 mins.

Then add 4 tbsps rice, recipe said basmati, but any will do. Cook for around 15 mins until rice is done, then add your bits of leftover cooked chicken, chopped small, and a small apple or half a large one, chopped (don’t bother peeling), bring all to boil and cook a further 5 mins.

Naan bread is nice to serve with it, but I don’t have any so tonight it’ll be just toast.

That sounds wonderfully warm and filling. Love home made soup as you know what you've put in it. Frightening when you read the ingredients in tinned soup.
