Buddha bowl

We needed a quick dinner with no fuss yesterday and tried a ready-made Buddha bowl. Brown and wild rice, chickpeas and cauliflower coated in a tikka style sauce, Saag Aloo potatoes, grilled red pepper and pink pickled onions.
I'm totally hooked.

Has anyone a good homemade recipe to share?

There's lots up on YouTube - if you just put "Buddha bowl" up in the heading. There's also loads on Pinterest.

It is a way of eating that's handy for if one has "a bit of this" and "a bit of that" in and wants to combine it into a meal.

As a vegetarian I too enjoy this way of both cooking and eating. A useful template is to plan to include five food types. Greens, grains, roasted veg, raw veg and protein. A topping (s) can be soft herbs, a spice mix or sauce.
For example, I often put together steamed tenderstem broccoli, spelt, aubergine, cherry tomatoes and grated carrot with perhaps some roasted and spiced chick peas or feta.
There are hundreds of viceo recipes on youtube to refer to. A template such as the one I have included ( others are available) is a good way to help planning. Good luck!

Very common these days and I wonder why if there isn't that down as a menu choice when out. It's basically literally served in a (big) bowl and is "a bit of this" and a "bit of that" and a variety of things - as stated usually a grain of some description, maybe some pulses, definitely some vegetables, probably a sauce or perhaps a dollop of hummus.

I think the concept came originally from Buddhist monks - as they walked around with a large bowl and asked various householders for some food towards their main meal for the day and one householder would give this, then another householder would give that and so on and - by the end of it = the monk had got a bowl full of various disparate pieces of food to eat.

I grow and eat a lot of vegetables and Buddha bowls are a great way of combining vegetables and pulses etc which may be lurking in the fridge in small quantities. Also bits and pieces in the protein drawer of my freezer that need using up.
I hadn’t thought of looking on Pinterest for inspiration. I might give that a go.

I definitely prefer to eat a bowl of cold veg, beans, rice etc., in the summer.
My winter version consists of ingredients I can pop in the microwave.

Indeed - not necessarily vegetarian - though it usually is in my experience.

Would I buy a ready made one? Probably not. I have plenty of leftovers to make this up.

At first I misread thought you’d put all that together yourself! A quick dinner?? I thought….

Might try one, but dh’s favourite ready meal, when we have one, which isn’t often, is Waitrose Nasi Goreng.

At home I sometimes make yellow lentil dal, with onions and lots of cauliflower and spinach - naan bread on the side. Fairly quick and easy.
