Gingernuts and Oreo biscuits

I have packets of these biscuits that nobody is keen to eat. I thought that if I made desserts with them they might be more acceptable. Does anyone have any simple recipes? The packets have been opened so I can’t donate them to a food bank.

My recipe is for a No-bake Cheesecake 😊 it doesn’t have any gelatine in it. It’s made with a biscuit base and mascarpone is the main ingredient.

If you make a “cheesecake” with biscuits crumbs it is NOT cheesecake. It’s a concoction made up of some biscuits mashed up and cheese, usually over sweetened and loaded with gelatine to hold it together. Cheesecake is baked; all of the ingredients are baked.

😁 You've obviously never tasted a proper unbaked one.

The baked ones are ok but not so good.

I once made some ginger nuts and I've no idea what I did wrong but it was impossible to eat them even after dunking them. They were rock hard. We took a hammer to them in the end just from sheer frustration. Then they went in the bin 😂

I think that ginger biscuits make a better crumb base than digestives.
I've beaten cream until double and dipped either type of biscuit in and used them in puddings .

Soak the biscuits in sherry, then sandwich with whipped cream in between each one, cover the log with cream and grate chocolate on top. Always a winner here

completely agree with Grandmabatty I always use crumbled gingernuts in melted butter pressed into bottom of tin for my non- baked cheesecake....gives a bit of piquancy!

I don't make them think it's posh! They do it all by themselves! Perhaps because it is sometimes served in fancy restaurants - who knows.

All I know is without fail, every time I serve it, there are oohs and aahs.

Apparently the ginger nuts I chose are wrong, totally wrong.
It has to be ginger snaps.
Blowed if I knew there was any difference.

Ginger snaps are wonderful particularly with cream, that is probably what he fancies.

Thanks Oreo. I crush my digestives with a rolling pin but didn’t know whether it would work with the harder biscuits. My oreos are the spooky type with the orange cream so don’t know if that would make a difference.

All I know is either of those biscuits, if put in a plastic bag and hit repeatedly with a rolling pin make a good base for a cheesecake.

I've seen recipes using Oreo biscuits on YouTube, where the biscuits are dunked in some sort of coffee/alcoholic brew, then sandwiched together with some creamy confection. Sort of Tiramisu with Oreos. Looks nice, I would eat it if offered probably. If you want to make it I'll come along and test it for you.

I made something similar with a different type of biscuit (can't remember which ones).
Make strong black coffee, add coffee liqueur, dunk biscuits quickly, cover in a mixture of whipped cream and mascarpone, with a little icing sugar if you wish. This was placed on a plate like a Swiss roll but you could put it in a dish like a tiramisu.
