Chicken thighs - per person?

So I’m the weird one, then. But over the past few years I’ve been trying to cut down the meat intake - unless it’s a roast, in which case it’s a case of 🐷🐷.
But we do eat considerably more veg than we used to - green veg will typically take up almost half the plate. Talking of which, the other day in Sainsbury’s I found a massive bag of frozen green (French) beans - for £1.07!!

No prizes for guessing what we’ll be having with the chicken and potatoes tonight…

Depends on size, some are huge, but greedy piggies in our house and we’d go for two each.

I always use chicken thighs - 2 per adult.
Yesterday went to Tesco…..no thighs, only drumsticks left.

I don’t often use them, but was looking up traybake recipes earlier - virtually all stating 8 to serve 4 people.

Those I usually buy are pretty big and TBH I’ve usually used one each, obviously with plenty of potatoes/rice/other veg. I’m sure it’d be different if you had hulking great, permanently ravenous teen boys to feed, but is it odd to have just one each?

It’s not a question of economising, BTW, I just feel that one per grown adult is enough.
