I do love a chicken tray bake. I make a similar one, but with added lemons and no pesto.

I've just made this for the first time tonight and it was so delicious I had to share it with you:
Cut 1 yellow pepper and 1 large courgette into chunks. Wash and slice thinly 300g new potatoes. Crush 2 cloves garlic. Wash about 12 cherry tomatoes. Add as many pitted black olives as you fancy (12-24). Combine in the bottom of a medium-to-large roasting pan. Sprinkle with salt and black pepper. Slash cuts in the top of 2-4 chicken breasts (depending on how many you're feeding). Mix 1 tablespoon green pesto with 3 tablespoons olive oil. Spread evenly over chicken. Cover with foil and bake at 190 degrees for 30 minutes. Remove the foil and cook for another 40 minutes. Yum.
