Super-quick, very easy meal for ‘starving’ Gdcs…

I knew they’d be famished after an extremely active day out a 40 minute drive away, so I cooked the rice first thing, for egg fried rice, with a small tin of sweetcorn and peas - and for once they had fish fingers with it - 5 minutes in the microwave. 🙂

I sometimes do gnocchi as a quick meal.
Confess I buy the gnocchi frozen - used to make it but lazy now.

Heat it in olive oil, add in a tomato sauce, extra baby tomatoes, mozzarella pearls and basil.

Pesto pasta is super quick, stir in a few frozen peas. Beans on toast even quicker.

Pre-cooked meatballs in tomato sauce, or bolognese, reheated in microwave, served with quick-cook pasta, maybe add some peas or broccoli. On the table in under ten minutes.

Air-fryer chips, microwaved fish fingers, baked beans. You can serve then cook more chips for seconds, if you only have a small airfryer.

We purchase readymade dried Barilla pasta. When we need a quick meal for GC --Broth, small chopped onion, carrot. Add dry pasta and boil.

I always do. They don’t go crispy on the outside, but that bothers me not at all. Now and then for a quick lunch, or when dh is away so I don’t feel the need to cook a ‘proper’ meal, I have 5 just for me - with pickled onion vinegar. 😋

Me neither Twiglet. I keep cooked salmon fillets and crème fraiche in the freezer. Start pasta, thaw crème fraiche over low heat on the hob. Add flaked salmon and a little vegetable stock powder plus some frozen peas. On the table in 15 minutes at most.

If only it was so easy to feed my youngest grandson 12, he is allergic to eggs, fish, sesame, nuts etc etc. He never complains but I feel desperately sorry for him when his brother can eat anything.

The only light on the horizon is that at our local Wetherspoons they have an interactive board on the wall where he chooses what he would like, types it into the screen and also his allergies and it comes up with what he can have. He will be with us for 6 days next week and we will have at least 2 meals there.

Good idea. Would microwaved fish fingers go well with Baxter's Kimchi?

Witzend. when you microwave fish fingers, do you do them in tinned tomatoes, or anything else sort of soggy but tasty?

I sometimes microwave a frozen white fish fillet with some added olive oil and seasoning. The olive oil stops the fish sticking to the microwaveable plate.

Can he eat cheese? Tesco sells frozen cauliflower cheese patties which taste very nice.

Caleo, not, I just put them on a plate and zap them. To me (and the Gdcs) they’re pretty tasty anyway - especially mine, with the pickled onion vinegar.😋
I did them 2 each with big helpings of EF rice, but there were then seconds, at least one more each.

My grandchildren love pasta, they're quite happy to have it with just cheese but I usually have some bolognaise in the freezer. I buy the Garofalo Organic Moon & Star Shaped Pasta, or the Toy shapes, they're quite small and mix up well with the sauce so they can't just pick out the bits they like.
They also love pizza of course, not fussy about which type, I just add extra cheeze. Two of the small ones from Morrisons will fit in my airfryer to bake very quickly at the same time.
Hot cross buns or fruity buns, toasted, are a great standby for snacks after the park.

I'm all for proper food, cook from scratch etc, however, ALWAYS have in stock frozens - fishfingers, potato waffles, battered fish, micro pizza, for when i come in knackered or don't feel well. Eggs, scrambled, omelette etc. Microwave Rice, udon noodles (mum loves them, mix in with sweet corn and peas, bit of butter, cheese)
