Potato cake with new potatoes

I make them with egg and cornflour, you need a fair bit of flour to hold them together. I make sweet potato ones,too. A flat crepe pan works well,too.

In Lancashire my grandmother made potato cakes using mash, flour, seasoning, and egg. They would be fried on a griddle. My mum never tried to make them as far as I know.
Once the potato cakes were done they would be served buttered.

It actually tasted all right just heaped on a plate but I thought i could use something like pastry cutters to shape......if I could be bothered.

I might use Hellmans vegan Mayo, to help hold it together. No egg in it obvs.

I just heaped it on the plate with the sea bass on top. It tasted very similar.

The chat bots i asked used raw potatoes these were cooked.

They would call that "smashed new potatoes" in a posh restaurant and charge a fortune for it.

In Ireland we add flour.

They certainly wouldn't mash so I couldn't use the method I'd normally use, but perhaps grating them like Rösti would work better? Otherwise cooking then "crushing", frying with the other ingredients until golden to make them hold together.

Maybe new potatoes are too waxy.

Our local Italian has sea bass with vegetable cake. Potatoes, onions, carrots, courgettes and spinach, they do not use egg and sometimes they are looser than others, but still delicious.

Would some beaten egg help to hold it together?
