Ingredients

125 g (4oz) self-raising flour
1 tsp baking powder
125g (4oz) caster sugar
125g (4oz) soft margarine
2 large/3 small eggs
25g (1oz) cocoa powder
1 tsp instant coffee powder
3 tbsp very hot water

For the icing:
100g (4oz) icing sugar
25g (1oz) cocoa powder
50g (2oz) butter or margarine
3 tbsp water
75g (3oz) granulated sugar

Handy Hint

I use non-stick sandwich tins and line them with baking parchment. Don't worry if the icing appears to crack as it cools in the bowl, just beat it up again before you use it

Method

1. Set the oven to gas 4/ 180C/ 350F. Grease 2 18-20cm /7-8in sandwich tins.
2. Sift the flour & baking powder into a large mixing bowl.
3. Add sugar, margarine and eggs.
4. Mix the cocoa & coffee powder to a smooth paste with water just off the boil and add to the bowl.
5. If using an electric mixer, start one the lowest speed.
6. Begin to mix the ingredients and as soon as they start to blend, increase the speed and beat at top speed for 1 minute only.
7. Divide the mixture between the 2 sandwich tins and smooth the tops.
8. Bake for 25-30 mins until the tops of the cakes are firm.
9. Turn out on to wire trays and leave to cool.
10. Sift the icing sugar and cocoa into a bowl
11. Put the remaining ingredients into a small saucepan and heat gently, stirring until the sugar is dissolved.
12. Bring to the boil & immediately pour into the bowl of sugar and cocoa, stirring to a smooth, thin cream.
13. Leave to cool until the cake is ready to be iced, the mixture will thicken as it cools.
14. When the cakes are cool, use half the icing mixture to sandwich the 2 cakes together & spread the remaining icing over the top.

When my children were little I was a very busy working mum. I used to rustle this cake up for every birthday and decorate it with chocolate buttons, chocolate fingers etc. but its also sophisticated enough for grown ups. Its moist and yummy.
