IngredientsFor the cake:1 heaped tbsp cocoa powder 2 tbsp hot water 115g (4oz) self-raising flour 1 tsp baking powder 115g (4oz) caster sugar 115g (4oz) soft margarine 2 large eggs For the chocolate frosting: 85g (3oz) icing sugar 30g (1oz) cocoa powder 40g (1½oz) butter 55g (2oz) caster sugar 2 tbsp water |
Handy HintTo make larger cakes, increase the amounts of all the ingredients proportionately – I usually use 8oz flour/sugar/soft margarine, 1½ teaspoons of baking powder and 4 eggs etc and for the frosting - 6oz icing sugar/2oz cocoa to 3oz butter, 4oz caster sugar and 4 Ts water. Bake in 8 inch tins – or, with 7in tins, the cakes will just be deeper! |

Method1. Grease and line 2 x 7 inch baking tins and heat oven to 180º C (gas Mark 4).2. Put cocoa powder into a basin and mix into a paste with the hot water. 3. Put all the ingredients into a bowl and mix until a smooth blend. 4. Divide equally between the baking tins and bake for 25- 30 mins. 5. Turn out to cool on a wire rack. For the frosting: 6. Sift icing sugar and cocoa powder into a bowl. 7. Heat the butter, sugar and water in a saucepan until boiling, pour over the icing sugar/cocoa and stir in. Leave to cool slightly before spreading between the layers of cake and on top. Enjoy! |
