Ingredients

200g good plain chocolate
200g butter
1.5 cups of sugar
3 tbsp cocoa (sieved)
1 tsp vanilla essence
1/2 cup of water
5 eggs (separated)
1.25 cups of self-raising flour

Handy Hint

This is best baked and kept in its dish, as it is difficult to remove. Cover with foil and can keep well in fridge, but is best eaten at room temp.

Method

1. Melt all the above ingredients together - except for the eggs - on a low heat, in a bowl over a saucepan of hot water. Don't let the base of the bowl touch the water - just above is best. Stir together until well melted and smooth. Remove from the heat.
2. Add the egg yolks, and mix together until shiny and slightly thickened.
3. Remove 1 cup of this mixture and set aside - this will be used as the icing (frosting). Pour the rest of the mixture into a large bowl.
4. In a separate bowl, beat the egg whites until stiff and carefully fold into the chocolate mixture, then gently fold in the 1.25 cups of self-raising flour (or plain flour + 2 tsp baking powder)
5. Pour the mixture into your prepared baking dish (approx. 12" x 10" (ish)) and bake at 190/200C, for approx 30 mins until cooked through - test with a skewer. Cool slightly.
6. Pierce the cake in lots of spots (!) with a skewer and pour over the cup of chocolate mix. that you set aside earlier. This is best done from the centre of the cake - outwards. Leave to cool and the chocolate 'sets'.

This is just a delicious cake and is made in my family as a birthday cake - and never lasts too long!
