Ingredients1 tbsp cocoa2 tbsp hot water 100g soft margarine 100g caster sugar 2 large eggs 100 g self-raising flour 1 tsp baking powder For the icing: 40g butter 25g cocoa (sieved) 2-3 tbsp milk 100g icing sugar (sieved) |

Method1. Heat oven to 180°C (350F/Gas 4). Grease and line 20cm round cake tin.2. Blend cocoa with hot water in a large bowl. Leave to cool. Add remaining cake ingredients, beat for 2-3 minutes. 3. Turn into tin and bake 35-40 minutes, until it springs back when pressed. 4. Turn out, remove paper, cool. 5. To make icing: melt butter and stir in cocoa. Cook over low heat for 1 minute. Remove from heat, add milk and icing sugar. 6. Beat well, then cool to a spreading consistency. Spread over top of cake and leave to set. 7. Freezing: Open freeze. Wrap, seal, label. Store for up to 3 months, thawing 3/4 hours. Could slit, fill with fruit and cream for dinner party. |
