Ingredients1 pkt digestives or plain biscuits (400g)
110g butter (or margarine)
400g tin condensed milk
15 glacé cherries (chopped)
60g sultanas or raisins (or mixed)
400g chocolate |
Handy Hint
Don't worry if it seems a bit dry - seems to mature in the freezing/defrost process and is great served with either chocolate or vanilla ice cream |
Method1. Line a square tin with greaseproof paper.
2. Crush the biscuits (I put into a plastic bag and pound them hard!!)
3. Melt the butter with the condensed milk and half of the chocolate until smooth.
4. Mix the cherries and sultanas into the crushed biscuits and then pour in the melted butter mixture.
5. Stir until all mixed together.
6. Pour into the tin and spread well.
7. Place in the freezer overnight.
8. Defrost 2-3 hours before required.
9. Melt the remaining 200g chocolate and spread evenly over the cake.
