Ingredients

5 medium bananas (mashed)
2 med eggs (beaten)
170g (6oz) soft brown sugar
100g (3.5oz) sultanas (or dried mixed fruit)
100g (3.5oz) chopped walnuts (optiona)
225g (8oz) self-raising wholemeal flour

Method

1. Put mashed banana, beaten egg, sugar, sultanas (or dried mixed fruit) & chopped walnuts (optional) into a bowl and mix. Add the flour and mix it in.
2. Heat oven to Gas Mark 4 (180C, 350F). Put mixture into greased cake tin and cook for 1 hr to 1hr 15mins.
3. Halfway through cooking cover with foil to prevent top getting too brown
