Ingredients

225g softened unsalted butter (can also use margarine)
225g caster sugar
225g self-raising flour
4 eggs
Zest of 1 lemon

For the topping:
Juice of 1 lemon
50g caster sugar

Method

1. Heat the oven to 180 (or 160 if fan oven)
2. Beat together the butter and sugar until pale and creamy, then add the eggs one at a time, then sift in the flour, add the lemon zest and mix until all combined.
3. Line a loaf tin (or sometimes I use a round tin, whatever is available) with greaseproof paper.
4. Bake for 50 minutes.
5. Take out of the oven and while still warm and in the tin make the topping: mix the lemon juice and caster sugar until smooth.
6. Prick the top of the cake then pour the drizzle all over. Leave to cool completely in the tin, when cool place on a plate and enjoy.
