Ingredients450g (16oz) plain white flour1 heaped tsp bicarbonate of soda 1/2 tsp salt (or to taste) 340-400ml (12-14fl oz) milk or buttermilk |
Handy HintLovely served still warm with some homemade soup on cold days. Or makes nice rustic sandwiches for a picnic. |

Method1. Preheat oven to 200 C or equiv (180 Fan Oven) and warm a cast iron, lidded casserole dish.2. Sift dry ingredients into a large bowl and gradually add milk until all flour has been incorporated. 3. Turn out dough and lnead lightly then form into a smooth round. 4. Dust casserole a little with flour and place dough inside. 5. Score a deep cross into the top of the dough. 6. Cover with lid and bake for approx 50-55 mins. 7. Turn out and wrap in a damp cloth until cold. |
