Ingredients

For the base:
100g margarine
10ml cocoa
100g self-raising flour
65g crushed cornflakes
75g soft brown sugar
For the icing:
225g icing sugar
30ml water
2.5 ml peppermint essence
Green colouring
150g chocolate

Method

1. Melt margarine and add all dry ingedients. Press into 7" X 11" tin
2. Bake at 350' F 180'C for 20 mins. Leave to stiffen
3. Blend icing sugar, water, essence & food colouring until a stiff icing is obtained.
4. Spread over base.
5. Leave for half an hour to firm.
6. Melt chocolate (with a little margarine & vanilla essence if wished) & pour over to cover.

Looks wonderful and very useful for making for School Cake Sales! Only disadvantage is that you want to eat too many and no one else gets a look in! Think After Eight biscuits!
