Ingredients

2 salmon fillets (or steaks)
4/6 tbsp chopped tarrogon
Butter
1 clove garlic (crushed)
4 tbsp creme fraiche or double cream
Lemon juice

Handy Hint

If you like garlic (as I do) then use 2/3 cloves. Regarding the herbs, I like to use tarragon, but you can use any herb or combination of herbs to your preference

Method

1. Put the chopped herbs on a plate and press both sides of the salmon into the herbs.
2. In a frying pan melt the butter and add the garlic (to prevent the butter from burning you can add a little oil) when the buter has melted add the salmon.
3. Cook for about 2 minutes on either side, taking care not to overcook the salmon (cooking time depends on the thickness of the salmon).
4. Pour the creme fraiche or double cream into the pan around the salmon and heat through. Remove the salmon and add a squeeze of lemon juice into the pan, stir round and pour the sauce over the salmon.

Slightly adapted from a recipe by the wonderful Nigel Slater. Always works and is very tasty. Serve with new or saute potatoes, green beans or broccoli or peas.
