Ingredients1. stick celery (thinly sliced)small onion 2 cloves garlic Carrot Red pepper Cherry tomatoes (halved) Tin borlotti Tin canelini beans Approx. half litre stock (Marigold bouillon preferred) Fresh thyme (chopped) (or dried) prob. 2 tbsp fresh or 1 dried Parsley (chopped) for garnish |
Handy HintActually you can add anything to the bean base as long as its tasty. For veggie friends' main dish I have added chopped goats cheese with the tomatoes, or it makes a good side for meat/fish dishes. Tis is all a bit approximate as I have done this from memory for years. |

Method1. Fry the sliced veg for about 5 mins.2. Drain and rinse the canned beans, stir into veg with stock & herbs. 3. Simmer for about 10-15 mins dependant on fierceness of hob. 4. Add tomatoes and simmer for another couple of minutes so they are just slightly soft, sprinkle with parsley to serve. |
