Ingredients

4 meringue nests (shop bought is completely fine)
1 tub mascarpone cheese
1 tbsp icing sugar
1/2 tsp vanilla essence
approx 200g strawberries (and/or raspberries, blackberries)

Handy Hint

This 'not quite' Eton mess is a fantastic variation on the traditional dish. Don't make too far in advance or the meringues go soggy!

Method

1. Beat the marscapone with the vanilla and icing sugar ( you can add more of either to taste).
2. Bash the meringues (good for stress!) and then fold in the pieces together with the chopped fruit.
