Ingredients

5 tbsp white sugar
2 tbsp golden syrup
1 tsp bicarb of soda
600ml whipping cream
1 large can of condensed milk
2-3 tbsp of gin or vodka (optional)

Method

1. To make the honeycomb - place the sugar and syrup in a pan and cook over a low heat until the sugar melts. Bring to the boil and boil rapidly until the caramel is a deep golden colour.
2. Remove from the heat and sift in the bicarb of soda. Stir the frothy mixture, then pour on to a greased baking sheet. Allow to cool and break into smallish pieces.
3. Whip the cream until floppy, then beat in the condensed milk and alcohol (if using this!). Continue whipping the cream mixture until quite stiff.
4. Fold the pieces of honeycomb plus any crumbs into the cream mixture. Place in a freezer proof bowl and freeze for about 8 hours.
