Ingredients

225g (8oz) self-raising flour
115g (4oz) golden granulated sugar
115g (4oz) chopped butter or margarine
3 or 4 cooking apples
1 egg (beaten)
Milk to mix

Handy Hint

The oven temperature doesn't seem to matter - just whatever you are doing for your roast.

Method

1. Put the flour, sugar and butter/margarine into a large bowl and mix. Leave the butter in lumps.
2. Peel 3 or 4 cooking apples (or equivalent weight of eating apples) and slice thickly into the above mixture.
3. Stir in a beaten egg and then enough milk to make a stiff batter. This may look very lumpy but never mind. Put into a greased cake tin or baking tin. Cook for about one hour at Gas Mark 4 (180 C or 160 circotherm).

This has become a firm favourite in our household. This week I made it using plums instead of apples and plum juice instead of milk and it was even more delicious - especially served warm with a good dollop of ice cream!

This sounded delicious so I thought I would give it a try. I doubled the quantity of ingredients and baked at the recommended oven temp. I tend to poke a clean skewer or knife into the middle of the cake and if it comes out clean then it's cooked. It is lovely eaten warm and fresh with a humongous dollop of thick cream although custard would be equally nice. My husband ate two large slices of it and pronounced it delicious. Thank you for sharing it. PS I also lined the bottom of the deep cake tin with greaseproof paper. Can't wait to try it with another fruit.

I'm not a domestic goddess, so 3 lines of "method" to make this cake really appealed to me!. This cake was really easy to make,delicious to eat and very popular with all the family. Thank you antheaholloway.

This recipe has been in our family for over 70 years. We have no idea who Mrs Kelly was or even if she ever existed! We make this as a super dessert when cooking the Sunday roast. The oven temperature doesn't seem to matter - just whatever you are doing for your roast. We ring the changes with rhubarb or gooseberries and always make a jug of custard to go with it. Delicious! Even the younger members of our family, who had never successfully made a cake in their lives, can make this with excellent results.
