Handy HintMicrowave wattage powers vary so times for each stage are only approximate. Recipe (and cooking times etc ) work well halved if you want a trial run... but recipe is so easy it never fails ! Will keep up to 6 weeks in fridge. |

Method1. Juice and zest the lemons. Chop butter into small pieces. Melt butter sugar and lemon in large microwavable bowl on full power for 3-4 mins or until butter melts and sugar dissolves. Stirring well every 2 mins.2. Beat/whisk eggs until very smooth. Whisk into butter mixture and microwave for 6-8 mins, stirring every minute until curd thickens . 3.
