Ingredients

3 handfuls Arborio rice
Vegetable stock
2/3 leeks
Sundried tomatoes
Half pack Philadelphia Light Herbs and Garlic
Salt and pepper to taste

Handy Hint

I very often tip in a small pack of prawns which, of course, then makes the dish non-vegetarian but is delicious.

Method

1. Slice leeks and sweat in small amount of oil for 5 mins.
2. Gradually add rice and stock until all is absorbed.
3. Add chopped sundried tomatoes
4. Season
5. Lastly add good dollop of cheese and stir in thoroughly

This is a great recipe to make at any time - all ingredients should be in the cupboard/fridge; it is quick and can feed from 2 - ?? depending on how much rice is used; it's also cheap, filling and nutritious.
