Don't overcook - they can go soggy quickly. If cooking for babies leave out the salt.

Method

At this time of year, there's often a glut of summer squashes - courgettes, jumbo pink banana and patty pan. Freshly picked when small even the fussiest eaters love them in this colourful side dish!

1. Prepare the squash into thin slices or wedges - when small and tender skins can be left on.
2. Heat a frying pan and add olive oil or butter, add the squash, cook for around 5 minutes on a medium heat until tender. Add a pinch of salt.
